An easy recipe I threw together with minimal ingredients:
– 1 container of ricotta cheese
– 1/2 pound Gouda, grated
– 1/3 pound havarti, grated
– 1 pint assorted grape tomatoes, cut in half
– Pre-made pie crust
– Italian herbs seasoning
– Salt and Pepper
Butter or grease your tart or pie dish. After allowing the pie crust to come to room temperature, gently press into tart dish.
In a large bowl mix together cheeses with herbs to taste, season with salt and pepper.
Scrape cheese and herb mixture into the prepared pie crust, spreading evenly. Top with tomato halves.
Bake in oven set to 400 degrees for 30 minutes.
