Hola amigos!
Felíz Cinco de Mayo! The recipe is super easy – no baking needed! Here is the link to the recipe: Churro Truffles
Now I have to admit that I totally messed this up when I made it. The recipe tells you to put 1TBSP of cinnamon into the truffle filling and save the other 2TBSP of cinnamon for the crunchy topping. Well….I may have just gone ahead and put all 3TBSP of cinnamon into the filling by accident…….Yup, so that happened. I also happen to be too poor to buy all the ingredients again to make it correctly. BUT! They still taste good. Very cinnamon-y, but good. In order to make up for my mistake, I just omitted any cinnamon from the topping.
Now a little background on Cinco de Mayo, because I’ve studied Spanish and its related cultures for like 8+ years now and I can’t just let this opportunity pass me by. Don’t worry, Ill be brief. Firstly, Cinco de Mayo is NOT Mexican Independence Day. Thats in September and I can’t stand it when people get that wrong. Educate yo’self: http://en.wikipedia.org/wiki/Cinco_de_mayo
Have a wonderful day!
